Recipe: Banana Bell Pepper Salsa

Ingredients

  • 2 large bananas
  • 1/2 c red bell pepper, de-veined, seeded and diced
  • 1/2 c green bell pepper, de-veined, seeded and diced
  • 1/2 c yellow bell pepper, de-veined, seeded and diced
  • 1 Tbl ginger, minced
  • 1/4 c fresh cilantro, chopped finely
  • 3 Tbl lime juice
  • 2 Tbl brown sugar, packed
  • 1 Tbl olive oil
  • Salt and pepper to taste

Instructions

  1. Combine all ingredients in a mixing bowl and gently toss to mix. Salt, pepper, lime juice and sugar to taste. Best served after 2 hours of refrigeration. Yields about 2 cups.
