Recipe: Baked Stuffed California Avocados

Ingredients

  • 2 c diced chicken
  • ¼ c California sherry
  • 1½ celery, diced
  • ½ c toasted almonds, slivered
  • 1 pimiento, chopped
  • ½ c light mayonnaise
  • 2 Tbl fresh lemon juice

Instructions

  1. Preheat oven to 450 degrees F.
  2. Combine mayonnaise, lemon juice and rind, onion, salt and pepper in a small bowl. Heat chicken and sherry in a large saucepan. Add celery, almonds, pimiento and the mayonnaise mixture, blending thoroughly.
  3. Place avocado halves on a cookie sheet and fill with mixture. Bake in preheated oven until lightly browned, about 10 minute.
  4. Serve immediately.
