Recipe: Baby Carrot Salsa

Ingredients

  • 1/2 c baby carrots, diced
  • 1 Tbl red onion, diced finely
  • 1 Tbl red bell pepper, diced finely
  • 1 Tbl yellow bell pepper, diced finely
  • 2 Tbl fresh cilantro, chopped
  • 1 green chile peppers, diced finely
  • 1 Tbl fresh lemon juice
  • 1/8 tsp salt
  • 1/2 tsp freshly ground black pepper

Instructions

  1. In a glass mixing bowl combine carrots, red onion, red and yellow bell peppers, cilantro, green chili, fresh lemon juice, salt and pepper. Cover with plastic wrap and refrigerate for 30 minutes prior to serving. Yields about 2 cups.
