Recipe: Avocado, Tomato and Onion Sandwich

Ingredients

  • 2 whole-wheat rolls
  • 2 Tbl olive oil
  • ½ Tbl garlic powder
  • ¼ Tbl basil
  • ¼ tsp oregano
  • Dash of salt
  • Dash of black pepper
  • 1 Roma tomato, sliced
  • ½ red onion, thinly sliced
  • 1 large ripe avocado, peeled, pitted and sliced

Instructions

  1. Preheat oven to 375 degrees F. In a small bowl mix olive oil, garlic powder, basil, oregano, salt and pepper to make olive oil sauce.
  2. Slice rolls lengthwise. Layer bottom of each roll with tomato, onion and avocado. Drizzle olive oil sauce over top of vegetables and over top slices of bread.
  3. Place cookie sheet in center oven rack and bake open-faced sandwiches10 to 12 minutes, or until lightly toasted.
  4. Serve warm.
