Recipe: Avocado Stuffed Tomatoes

Ingredients

  • 6 medium tomatoes
  • Salt to taste
  • 2 medium avocados, peeled, pitted and mashed
  • 2 tsp fresh lemon juice
  • 1 medium onion, chopped finely
  • 1 small can diced green chilies
  • 3 slices vegan bacon, cooked and crumbled
  • 6 lettuce leaves

Instructions

  1. Slice off the tops of the tomatoes and scoop out pulp, leaving the shells intact. Reserve pulp. Sprinkle a dash of salt inside each tomato shell. Chop reserved pulp finely.
  2. Mash avocado fruit and combine with tomato pulp. Mix avocado/tomatoes with lemon juice, onion and diced green chilies.
  3. Stuff tomato shells with avocado mix and sprinkle with bacon. Serve each stuffed tomato on a lettuce leaf.
