Recipe: Avocado Soup

Ingredients

  • 2 ripe avocados, peeled, pitted and sliced
  • 4 c cold chicken broth (can substitute vegetable broth for vegetarian)
  • 2 Tbl fresh lime juice
  • ½ tsp cayenne pepper
  • Salt and freshly ground black pepper to taste

Instructions

  1. Mash avocados in a food processor until they form a smooth paste. Add the paste to the chicken/vegetable broth, stirring until well mixed. Add remaining ingredients and mix thoroughly. Salt and freshly ground black pepper to taste. Refrigerate for at least 1 hour before serving. Garnish with fresh chives, more diced avocados and serve cold.
