Recipe: Avocado Soup with Green Peppercorn

Ingredients

  • 1 medium white onion, diced
  • 1Tbl ground coriander
  • 1 Tbl olive oil
  • 4 large ripe avocados, peeled, pitted and coarsely chopped
  • 1/3 c green peppercorns in brine, drained
  • Salt and freshly ground black pepper to taste
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 2½ qt light chicken stock
  • Fresh cilantro and peppercorns to garnish

Instructions

  1. In a large saucepan, cook onion, garlic and spices in olive oil over medium/high heat for about 10 minutes, stirring frequently. Add avocados and chicken stock, bring to a boil and then reduce heat to medium/low. Cook 20 minutes. Cool to room temperature.
  2. Puree soup in blender until smooth.
  3. Return to saucepan and bring back to a boil over medium/high heat. Add peppercorn, then reduce to medium/low heat and simmer for about 10 minutes.
  4. Serve immediately. Garnish with fresh cilantro and peppercorns.
