Recipe: Avocado Sorbet

Ingredients

  • 1 c sugar
  • 1 c light corn syrup
  • 2 c water
  • 1 tsp grated lime peel
  • 3 ripe avocados, peeled, pitted and mashed
  • 2 Tbl lemon juice
  • 1 Tbl lime juice
  • Fresh raspberries and cookie crisps

Instructions

  1. Bring sugar, corn syrup and water to boil in a large saucepan. Remove from heat and stir in lime peel. Cool for 50 to 60 minutes.
  2. Blend avocados, lemon and lime juices in food processor or blender until smooth. Add cooked sugar mixture and blend again until smooth. Pour into a 13×9-inch pan or two smaller pans, so depth is about ½ inch. Freeze one hour.
  3. Remove sorbet from freezer and then beat for 1 to 2 minutes until mixture is light and creamy. Pour back into pan and cover with plastic wrap. Freeze until firm, about 4 hours.
  4. Serve sorbet with fresh raspberries and cookie crisps.
