Recipe: Avocado Sandwich

Ingredients

  • 8 slices ripe avocado
  • ¼ c Italian salad dressing
  • 1 Tbl light mayonnaise
  • 4 slices whole-wheat bread, toasted
  • 4 slices low-fat cheddar cheese
  • 8 thin tomato slices
  • 1 c alfalfa sprouts
  • Salt and freshly ground black pepper to taste

Instructions

  1. Toss avocado slices gently with Italian dressing; drain well and reserve dressing. Spread mayonnaise evenly over 1 side of each bread slice. Top bread slices evenly with avocado, cheese, tomato and alfalfa sprouts.
  2. Drizzle open sandwiches with Italian dressing, season to taste, and then close and serve immediately.
