Recipe: Avocado Salad

Ingredients

  • 2 ripe avocados, peeled, pitted and balled
  • 6 romaine lettuce leaves
  • 1 tsp salt
  • ½ tsp white pepper
  • ½ tsp dried oregano
  • 1 clove garlic, minced
  • 1 sprig fresh thyme
  • 2/3 c olive oil
  • 1 Tbl red wine
  • 1 Tbl vinegar
  • 1 Tbl lemon juice

Instructions

  1. Peel and pit avocados and then scoop out avocado fruit with rounded spoon, shaping fruit into balls. Place the avocado balls onto two plates lines with romaine lettuce leaves.
  2. In a small bowl whisk together salt, white pepper, dried oregano, thyme, olive oil, red wine, vinegar and lemon juice.
  3. Pour over avocados and serve immediately.
