Recipe: Avocado Salad Flatbread Sandwich

Ingredients

  • ¾ c white wine vinegar, divided
  • ½ Tbl fresh garlic, chopped finely
  • Salt and freshly ground black pepper to taste
  • 1 c olive oil
  • 2 c sweet onion, chopped
  • 2 c tomato, chopped
  • Flat bread, such as pita, 24 rounds, about 7-in in diameter
  • Hearts of Romaine leaves, as needed 12 oz shaved
  • Romano cheese
  • 6 lbs California avocados
  • Jack or Fontina cheese in 1 oz slices may be substituted

Instructions

  1. To make vinaigrette, whisk together ½ c vinegar, garlic, salt and pepper. Whisk in oil; reserve.
  2. Combine onion, tomato and remaining1/4 c vinegar; reserve. Just before serving, dice avocado and then fold into onion and tomato mixture.
  3. Brush one round of bread with 1 Tbl vinaigrette. Arrange 1 or 2 leaves Romaine lettuce in center of bread. Top with ½ c avocado salad, garnish with ½ oz cheese.
