Recipe: Avocado Pita

Ingredients

  • 1 large ripe avocado, peeled, pitted and chopped
  • 1 large plum tomato, chopped
  • ½ small white onion, chopped
  • 1 clove garlic, chopped
  • 1 Tbl olive oil
  • ¼ c cooked black beans
  • 1 pita bread

Instructions

  1. Chop avocado, tomato, white onion and garlic clove. Put chopped garlic through a garlic press. Mix all vegetables with olive oil. Rinse beans well and combine all ingredients in a medium bowl. Stuff pita and serve immediately.
