Recipe: Avocado, Papaya Salsa Chicken

Ingredients

  • Marinade Ingredients
  • ½ c olive oil
  • 1 c red wine vinegar
  • 1 tsp garlic salt
  • 1 tsp parsley
  • 1 tsp salt
  • 1 tsp freshly ground black pepper
  • 2 tsp fresh orange juice

Salsa Ingredients

  • 2 medium ripe avocados, peeled, pitted and chopped
  • 1 small ripe papaya, peeled, seeded and chopped
  • 1/3 c fresh lime juice
  • 2 medium tomatoes, diced
  • 2 green onions, thinly sliced
  • 2 Tbl sugar
  • 2 Tbl extra-virgin olive oil
  • 1 Tbl snipped parsley
  • 1 Tbl snipped fresh basil
  • Hot pepper sauce to taste
  • 4 skinless, boneless chicken breast

Instructions

  1. In a glass baking dish, briskly whisk all marinade ingredients. Coat both sides of chicken breasts and let site for 30 minutes to 1 hour. Grill chicken, brushing with marinade over medium heat until done, about 12 to 15 minutes.
  2. In a 1-quart container with a lid, toss avocados and papaya with lime juice. Add tomatoes, green onions, sugar, olive oil, parsley, basil and hot pepper sauce.
  3. Smother grilled chicken breast with avocado and papaya salsa and serve.
