Recipe: Avocado, Olive and Tomato Sandwiches

Ingredients

  • 2 whole-wheat rolls, lightly toasted
  • 1 c green olives
  • 2 Tbl extra-virgin olive oil
  • 1 Tsp garlic, chopped
  • 1 small ripe tomato, sliced thinly
  • 1 large ripe avocado, peeled, pitted and thinly sliced

Instructions

  1. Slice rolls lengthwise and lightly toast in broiler, about 1 minute.
  2. Place olives, olive oil and garlic in blender or food processor and mix until paste forms. Spread paste onto toasted rolls and top with tomato and avocado slices. Fold and serve immediately.
