Recipe: Avocado Mousse Dessert

Ingredients

  • 1 envelope (2 ¼ tsp) unflavored gelatin
  • ½ c cold water
  • 2 ripe Haas avocados, peeled, pitted and cubed
  • 2 Tbl fresh orange juice
  • ½ c lukewarm water
  • 1 ½ c low-fat sour cream, room temperature or warmed slightly
  • ½ c sugar
  • 1 Tbl vanilla extract
  • 2 Tbl fresh orange juice
  • Zest of one orange
  • Oil for preparing mold pan
  • Fresh raspberries and candied walnuts for garnish

Instructions

  1. Sprinkle gelatin over cold water in a heavy saucepan and let stand 1 minute. Cook over low heat for 1 to 2 minutes, and then remove from heat and let cool completely.
  2. Place avocados in a blender or food processor and while blending add 2 Tbl orange juice and up to ½ c water, blending until mixture is smooth and creamy.
  3. Transfer to a large bowl and gently whisk gelatin into mixture until gelatin is completely incorporated.
  4. In a separate bowl, blend sour cream, sugar, vanilla, orange juice and orange zest until smooth. Gently fold sour cream mixture into avocado mixture; mix well until smooth and creamy.
  5. Lightly oil gelatin mold (should be 3 to 4 cup capacity).
  6. Pour mixture into mold and smooth the top. Cover with plastic wrap and chill mold until firm, at least 4 hours to overnight.
  7. Slice to serve and garnish each serving with fresh raspberries and candied walnuts.
