Recipe: Avocado, Hummus and Tomato Sandwich

Ingredients

  • 2 slices whole-wheat bread
  • ¼ c hummus, garlic flavored
  • ½ ripe avocado, peeled, pitted and thinly sliced
  • 1 lemon wedge
  • 2 slices Roma tomato
  • Salt and freshly ground black pepper to taste

Instructions

  1. Spread 1 side of both bread slices liberally with humus. Layer bread with sliced avocado and squeeze lemon juice over the top. Layer top with tomatoes and then salt and freshly ground black pepper to taste.
  2. Serve immediately.
