Recipe: Avocado Holiday Cake

Ingredients

  • 1 egg, slightly beaten
  • ½ c mashed avocado
  • ½ c buttermilk
  • 1 c pecans, chopped
  • 1 c candied cherries, chopped
  • 1 c candied pineapple, chopped
  • 2 c sifted all-purpose flour
  • ¾ c sugar
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp salt

Instructions

  1. Preheat oven to 350 degrees F.
  2. Mix egg, avocado, buttermilk, pecans, cherries and pineapple. In a large bowl mix flour, sugar, baking soda, baking powder and salt. Pour avocado mixture into flour mixture and mix only until flour is moistened. Do not over mix.
  3. Pour into well-greased 9×13-inch pan or 3 4×7-inch loaf pans. Fill slightly more than half full. Bake 1 hour for large pan or 45 minutes for small loaf pans. Cool on rack.
