Recipe: Avocado Eggplant Sandwich

Ingredients

  • 8 slices whole-wheat bread
  • ½ yellow bell pepper, seeded and thinly sliced
  • ½ red bell pepper, seeded and thinly sliced
  • 1 large eggplant
  • 1 large ripe avocado, peeled, pitted and thinly sliced
  • 1 tomato, thinly sliced
  • ½ red onion, thinly sliced
  • 4 jalapenos, seeded and thinly sliced
  • Shredded lettuce
  • Dash of red chili powder
  • Salt and freshly ground black pepper to taste

Instructions

  1. Thinly slice eggplant and grill in skillet over medium heat, with olive oil, red chili powder and salt until lightly browned. Lightly toast bread, then layer yellow and red bell peppers, grilled eggplant, avocado, tomato, red onion, jalapenos and lastly lettuce. Salt and pepper to taste, fold and slice diagonally.
  2. Serve immediately.
