Recipe: Avocado Curry Soup

Ingredients

  • 2 avocados, peeled, pitted and cubed
  • 2 ½ c chicken stock
  • 1 Tbl fresh parsley, chopped
  • 1 tsp curry powder
  • Salt and white pepper to taste
  • ½ c whipping cream

Instructions

  1. Blend avocados in food processor or blender with 1 cup of chicken stock until smooth. Stir in the remaining stock and the other ingredients and blend until smooth. Chill for at least ½ hour before serving.
  2. Garnish with sliced avocados.
