Recipe: Avocado, Cranberry Chutney over Brie

Ingredients

  • 1 (16oz) can whole cranberry sauce
  • 2 Chipotle peppers in adobo sauce, chopped
  • ¾ c dried cranberries
  • 1 medium apple, peeled, cored and diced
  • ¼ c granulated sugar
  • ¼ c brown sugar
  • 1/3 c apple cider vinegar
  • 2 tsp pumpkin pie spice
  • 1 large ripe Haas avocado, peeled, pitted and diced
  • 1 lb round or cut piece of
  • Brie cheese
  • Crackers, baguette slices or ginger snaps

Instructions

  1. Preheat oven to 350 degrees F.
  2. Combine cranberry sauce, Chipotle peppers, dried cranberries, apple, sugars, vinegar and pumpkin pie spice in a large saucepan or skillet and cook over medium heat. When mixture begins to bubble, reduce heat to low and simmer for 30 minutes, stirring occasionally. Remove from heat and let cool slightly. Add avocado pieces just before serving.
  3. Place Brie on a shallow oven-safe serving plate (or shallow casserole dish) and pour prepared chutney over cheese.
  4. Place uncovered dish in oven and bake for 5 to 7 minutes, or until cheese is soft, but not melted. Serve as a spread with crackers, baguette slices or ginger snaps.
