Recipe: Avocado, Crab and Grapefruit Salad

Ingredients

  • 4 ripe-firm avocado, peeled and pitted
  • 1 lb crabmeat, picked through for shell pieces and cartilage, and then diced
  • ½ c pecans, chopped
  • ¾ c light mayonnaise
  • 2 tsp ketchup
  • Dash of Worcestershire sauce
  • 8 lettuce leaves
  • 2 large grapefruits, peeled and sectioned
  • 2 hard-boiled eggs, chopped
  • ½ c black olives, sliced

Instructions

  1. Cook crabmeat and combine in a medium bowl with pecans, mayonnaise, ketchup and Worcestershire sauce. Mix well.
  2. Slice avocados in half, and then remove the seeds and skins. Scoop crab mixture into avocado pits. Arrange lettuce leaves on 4 serving plates and place filled avocado slices onto lettuce. Place grapefruit sections around filled avocados and garnish with eggs and black olives.
