Recipe: Avocado Asparagus Sandwich

Ingredients

  • 24 asparagus spears
  • 1 large ripe avocado, peeled and pitted
  • 1 Tbl fresh lime juice
  • 1 clove garlic, minced
  • 1 ½ c cooked long-grain rice
  • 3 Tbl plain non-fat yogurt
  • 3 fresh whole-wheat tortillas, 10-in diameter
  • 1/3 c fresh cilantro, chopped finely
  • 2 Tbl red onion, chopped finely

Instructions

  1. In a medium saucepan, bring about 2-inches of water to boil. Place asparagus in a steamer basket, cover and steam until just tender, about 5 minutes. Remove asparagus and immediately rinse in cold water to stop the cooking process. Drain thoroughly.
  2. In a small bowl, coarsely mash avocado and mix well with lime juice and minced garlic. Cook rice per package instructions.
  3. In another small bowl thoroughly mix plain yogurt with rice.
  4. Using a large skillet warm tortillas over medium heat until softened.
  5. Lay tortillas flat on a clean surface and evenly layer avocados, asparagus, rice and yogurt mixture, cilantro and red onion.
  6. Fold in both sides of tortilla and wrap tightly. If made in advance, store wrapped in plastic in refrigerator for up to 1 hour. Warm to room temperature prior to serving.
  7. To serve, cut each wrap in half crosswise.
