Recipe: Avocado and Squash Burritos

Ingredients

  • 2-dozen whole-wheat tortillas
  • 1 red onion, sliced
  • 1 lb broccoli, chopped
  • ¼ lb mushrooms, sliced
  • 4-5 zucchini squash, sliced
  • 2 large tomatoes, chopped Guacamole Salsa

Instructions

  1. Place onion, broccoli, mushrooms, squash and tomatoes in large skillet and add a few tablespoons of salsa. Mix and cover, simmering over medium heat for about 20 minutes. Stir frequently. Scoop vegetables into warm tortillas and wrap. Serve with salsa and guacamole.
