Recipe: Avocado and Roasted Tomatillo Salsa

Ingredients

  • 1/2 lb tomatillos, roasted
  • 1 red onion, halved
  • 2 cloves garlic
  • 2 Tbl fresh cilantro, chopped
  • 1 tsp salt
  • 1 jalapeño, seeded and chopped finely
  • 2 small/medium avocados, peeled, pitted and chopped
  • 2 Tbl fresh lime juice

Instructions

  1. Preheat broiler. Remove husks and rinse tomatillos under warm water to remove stickiness. Halve onion and arrange on rack of boiler with tomatillos and garlic. Broil vegetables about 8 minutes, turning once, until softened and lightly charred.
  2. Peel garlic and place in food processor with tomatillos, 1 onion half, cilantro and salt. Remove seeds from jalapeño and chop finely. Add jalapeño to tomatillo mixture and puree until mixture is almost smooth. Transfer to a bowl.
  3. In a smaller bowl, coat avocados in lime juice and mix well. Add avocados to tomatillo mixture, chill for 30 minutes and serve. Yields about 11/2 cup.
