Recipe: Avocado and Cucumber Sandwich

Ingredients

  • 1 whole-wheat roll
  • 1 ripe avocado, peeled, pitted and thinly sliced
  • Salt and pepper to taste
  • 2 slices tomato
  • 5 slices peeled cucumber
  • 1 Tbl extra-virgin olive oil
  • ½ small lemon
  • Thinly sliced low-fat cheddar cheese
  • ½ c alfalfa sprouts

Instructions

  1. Preheat oven to 350 degrees F. Pour olive oil into small bowl and squeeze ½ lemon into bowl. Place sliced avocados into olive oil/lemon juice bowl and mix. Salt and pepper to taste avocado slices.
  2. Slice roll diagonally and place marinated avocado slices into roll. Top with tomato, cucumber and cheese. Place open sandwich on a cookie sheet in center rack in oven. Bake about 10 minutes, or until sandwich is warmed and lightly toasted. Add sprouts, fold and serve immediately.
