Recipe: Avocado and Corn Salsa

Ingredients

  • 3/4 c olive oil
  • 4 cups fresh corn kernels (about 5 ears)
  • 2 avocados, peeled, pitted and chopped
  • 1 large red bell pepper, cored, seeded and diced
  • 1 large yellow bell pepper, cored, seeded and diced
  • 4 Poblano chilies, roasted, peeled, seeded and diced
  • 4 scallions, thinly sliced on the diagonal
  • 1/2 c red wine vinegar
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté corn about 5 minutes, or until lightly browned. Lightly season with salt and pepper. Transfer seasoned corn to a large mixing bowl. Add avocados, bell peppers, scallions and red wine vinegar to corn. Salt and pepper to taste and let sit 20 to 30 minutes to blend the flavors.
