Recipe: Argentinean Guacamole

Ingredients

  • Large pinch of saffron threads
  • 4 California avocados
  • 2 Tbl fresh lemon juice
  • 1/2 c white onion, chopped finely
  • 1/4 c fresh parsley, chopped
  • 2 tsp fresh thyme leaves, chopped
  • 4 large cloves garlic
  • 1 tsp salt

Instructions

  1. Lightly toast saffron threads in a dry frying pan (Take care not to burn).
  2. Pulverize in a mortar and pestle and set aside. Coarsely mash California avocados. Fold in remaining ingredients, including saffron. Serve with purple potato and sweet potato chips.
