Recipe: Apricot Salsa

Ingredients

  • 1/2 red bell pepper, roasted and chopped Olive oil
  • 1 small red onion, chopped
  • 1 medium tomato, chopped
  • 1 jalapeño, minced finely
  • 2 apricots, seeded and chopped
  • 2 Tbl dark rum
  • Dark apple cider

Instructions

  1. Cut a red bell pepper in half; remove seeds and brush with olive oil. Place the half under broiler very close to the heat until it blackens (about 5 minutes). Remove from heat and chop it.
  2. Sauté the chopped onion in small amount of olive oil until translucent. Add tomato and jalapeño and sauté about another 5 minutes until tomato is cooked. Add apricots and enough cider to cover. Boil down until cider is almost all boiled off. Add roasted bell pepper and stir. Add dark rum and flambé (light and swirl until it goes out). Yields about 1 to 2 cups.
