Recipe: Apple Enchiladas

Ingredients

  • 6 fresh whole-wheat tortillas
  • 1 (21 oz) can apple pie filling
  • 1 tsp ground cinnamon
  • 1/2 tsp nutmeg
  • 1/2 c butter
  • 1/2 c white sugar
  • 1/2 c brown sugar
  • 1/2 c water
  • 1/4 tsp salt
  • 1 can (7oz) diced green chilies
  • 1/2 c chopped green onion
  • 1 c nonfat sour cream
  • 4oz grated reduced-fat cheddar cheese
  • 4oz grated reduced-fat Monterey jack cheese

Instructions

  1. Preheat oven to 350 degrees and grease a 2-quart baking dish. Spoon a heaping quarter cup of pie filling evenly down the center of each flattened tortilla. Mix cinnamon and nutmeg in small bowl. Sprinkle cinnamon/nutmeg mix over tortilla, roll it up and tuck in the edges. Place the prepared tortillas seam side down in greased dish. In a medium saucepan over medium heat combine butter, sugars and water. Bring to a boil, stirring constantly. Reduce heat and simmer for 3 minutes. Pour sauce over enchiladas and let stand 30 minutes.
  2. Bake in preheated oven 20 minutes or until golden. Makes 6 servings.
