Recipe: Apple, Avocado and Hearts of Palm Salad

Ingredients

  • Dressing Ingredients
  • ¾ c low-fat mayonnaise
  • ¼ c ketchup
  • 2 tsp white sugar
  • 1 lemon, juiced
  • ¼ tsp paprika
  • 1 pinch ground black pepper
  • 2 Tbl freshly chopped chives

Salad Ingredients

  • 3 cups mixed salad greens
  • 1 large ripe-firm avocado, peeled, pitted and diced
  • 2 Granny Smith apples, peeled, cored and thinly sliced
  • ½ c coarsely chopped walnuts
  • 1 cup sliced hearts of palm

Instructions

  1. In a medium bowl, briskly whisk mayonnaise, ketchup, sugar, lemon juice, paprika and black pepper. Stir in chives and set aside.
  2. In a large salad bowl, toss salad greens, walnuts and hearts of palm. Add avocado and apple slices just before serving.
  3. Drizzle with dressing and toss to coat. Serve immediately.
