Recipe: Anaheim Red Onion Salsa

Ingredients

  • 4 large fresh ripe red tomatoes
  • 4 fresh green Anaheim chilies
  • 1 red onion, chopped
  • 1 clove garlic, chopped finely
  • 1 Tbl salt
  • 2 Tbl lime juice

Instructions

  1. Roast the tomatoes and green chilies on a gas grill or under the oven broiler until charred and blackened.
  2. Place the blackened chilies in a Ziploc freezer bag and let steam for about 10 minutes. Meanwhile, remove the skin from the tomatoes, cut them in half and remove the seeds. Then chop them into squares about 1/2 inch in size.
  3. Remove the chilies from the plastic bag and chop them. Combine with tomatoes and add the onion, garlic, salt, lime juice, olive oil and cilantro. Black pepper to taste. Add sprig of oregano and let chill for about an hour.
