Recipe: Anaheim Corn Guacamole

Ingredients

  • 1 c corn kernels
  • 2 Anaheim chilies, chopped
  • 1/4 red onion, chopped
  • 1 Tbl olive oil
  • 2 ripe avocados, peeled, pitted and mashed coarsely
  • 4 Tbl fresh lime juice
  • 2 Tbl medium/hot salsa
  • 1/4 c fresh cilantro, chopped
  • 2 tsp salt
  • 1/2 tsp freshly ground black pepper
  • Dash of hot pepper sauce

Instructions

  1. Preheat oven to 450 degrees and line a baking sheet with foil. Coat foil with cooking spray.
  2. Toss corn, whole chilies and chopped onion with oil in large boil and mix. Spread in single layer on prepared baking sheet.
  3. Roast for 15-20 minutes until vegetables are lightly browned.
  4. When cool, peel chilies and chop finely. Set aside corn, chilies and onion mixture and let cool.
  5. In a large mixing bowl coarsely mash avocados and then mix with lime juice. Stir in corn mixture and add salsa and cilantro. Season with salt, pepper and hot pepper sauce. Serve with tortilla chips. Yields about 3 cups.
