Recipe: Albacore Casserole

Ingredients

Cubed Albacore
  • Large chunk albacore, frozen
  • Extra-virgin olive oil
  • Garlic, crushed
  • Salt and freshly ground black pepper to taste
Casserole
  • 1 Tbl extra-virgin olive oil
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 tomato, chopped
  • 1 bunch cilantro, chopped fine
  • 1 bag shell pasta (precook until only half done)
  • Hot pepper sauce to taste
  • 1 can black beans, drain and well rinsed
  • 1 tsp oregano
  • 4 cloves fresh garlic
  • 1 lb Monterey Jack cheese, cut into large chunks

Instructions

  • Cubed Albacore
  1. Preheat oven to 350 degrees F.
  2. Place the fish in a large baking dish, and cover with olive oil, fresh crushed garlic and season with salt and pepper. Grill the fish until done, and then cool and cut into 1-inch cubes.
  3. Once the fish is done, let it cool and then cut into 1” cubes.
  • Casserole
  1. Pour olive oil in a large frying pan or wok. Press garlic into pan and add chopped onion. Cook at medium/high heat until onions start to turn clear.
  2. Add remaining ingredients. Stir and heat for additional two minutes. Pour into baking dish with cubed albacore (see above) and then cover with aluminum foil and bake for 30 minutes or until done. Serve with browned 10” flour or whole-wheat tortillas.

Number of servings (yield): 3
