Recipe: Alaskan Salmon and Avocado Pasta Salad

Ingredients

Salad Ingredients

  • 6 oz penne pasta, cooked
  • 2 Tbl French dressing
  • 1 (14 ¾ oz) can Alaskan salmon
  • 1 bundle green onion, sliced thinly
  • 1 large red bell pepper, thinly sliced
  • 3 Tbl fresh cilantro, chopped finely

Dressing Ingredients

  • 1 lime, juiced
  • 1 Tbl tomato paste
  • ½ c low-fat sour cream
  • 2 Tbl light mayonnaise
  • Paprika to taste
  • 3 ripe-firm avocados, peeled, pitted and diced
  • Lettuce leaves to serve on

Instructions

  1. Cook pasta, drain and then toss in large bowl with French dressing. Allow to cool. Drain and flake the salmon. Add to pasta along with green onions, sliced bell pepper and cilantro.
  2. In a small bowl whisk together lime juice, tomato paste, sour cream, mayonnaise and paprika. Toss salad together with dressing until well mixed. Salt and pepper to taste. Serve salad on bed of lettuce leaves garnished with paprika.
