Recipe: Adobo Salsa

Ingredients

  • 1 (28oz) can diced tomatoes
  • 1 green bell pepper, diced
  • 1/4 c red onion, diced
  • 1/4 c fresh cilantro, chopped
  • 1 Tbl adobo sauce from canned chipotle peppers
  • 1 Tbl fresh tarragon, chopped
  • 1/2 tsp salt
  • 2 Tbl balsamic vinegar
  • Black pepper to taste

Instructions

  1. In a bowl, toss together the tomatoes, bell pepper, onion, cilantro adobo sauce, tarragon and vinegar. Add salt and season to taste with black pepper. Cover and refrigerate for at least 30 minutes prior to serving. Yields about 2 cups.
